  • Preheat oven to 350 degrees. Butter a 9x13 inch baking dish.

  • In a medium bowl, combine butter, sugars and graham cracker crumbs until well coated. Press ½ to 2/3 of the crumb mixture into the bottom of the prepared pan. Bake for 5 minutes.

  • Remove from oven and sprinkle chocolate chips onto hot crust and return to oven for another 5 to 6 minutes.

  • Remove from oven and spread the chocolate evenly over the crust using a rubber spatula or knife. Sprinkle the marshmallows on top of the chocolate and return to oven for about 5 minutes or so until marshmallows start to look golden (I did end up turning the broiler on for a minute or so to get them golden – I was impatient what can I say!)

  • Remove from oven and sprinkle remaining graham crackers evenly over the top pressing slightly into the marshmallows.

  • Return to oven for about 5 more minutes to crisp up the topping. Remove from oven and cool completely before cutting into squares.

Tips

BEWARE – they will tend to be a little bit crumbly but worth it! I made these around 8 or 9:00 at night and they were good cooled a little but didn’t wow me. I tried them the next day and OMG - they were so much better after having set overnight and the chocolate firmed back up!
