I love this recipe. You can omit or substitute various veggies. You can bake it in the oven smothered with canned ench sauce and cheese or use it as a soft taco filling...the possibilities are endless but this a good starting off point! Don't forget your mexican condiments! :)

  • In a non-stick pan over medium heat spray Pam or heat 2 tsps of oil. Slowly saute onion slices making sure not to burn . Use a little veggie broth if it begins to stick. Add sliced muchrooms. Add veggie broth when needed. Add frz corn, baby spinach and fajita mix. Continue to cook until every thing is well merried and sauce thinkens. Add tapatio or other hot sauce to taste. Add lime toward the end. You may want to add salt and pepper but the fajita mix is pretty flavorful.

Tips

Really this is just a starting point. I always have some made and in my fridge. You can make lots of things from this. My favorite thing to do is stuff a whole wheat tortilla with the mix and feta cheese. Top with enchilada sauce and more feta. Bake and then serve with fat free sour cream, lime, and cilantro.
