January 2025 A keeper! Absolutely love this! I was looking to use up avocados and found this recipe. I used it to top Salsa-Baked Salmon Nachos from AR (family favorite) for something more than just avocados or guacamole. I really wanted to grill the corn, but sauteed the cut kernels in butter till brown. So good! I thought the balance of vinegar was nice, but we also use the larger avocados (4225) vs 4046 smaller Hass. Black beans would go so well in this, jalapenos too! Thank you! I like the smaller quantity though. Less waste when cooking for two. Might amp up the spices even more if I try it again. Saw MarthaJones’ comment after the fact. October 2024 OK with tweaks I agree with many of the reviewers that this does need a bit more pumpkin and spices. I scaled this down to 2 servings (4 slices), but only had enough of the egg-pumpkin mixture to coat 3 slices of bread. The mixture was very thick, so if I make this again, I’ll whisk in a little milk. We don’t care for whole wheat bread, so I did use brioche, and this was a very nice breakfast. The flavors are well rounded and fresh. We used it for dipping chips and the leftovers in tacos. We'll be making this a lot this spring and summer. I subbed Earth Balance Margarine for the butter and egg replacer (EnerG) for the egg. I also followed the advice of others and used half the amount of nuts and white chocolate chips and the result was super!
