I came up with this recipe by combining a couple other recipes while on a low carb diet and craving pizza. When ready to serve be sure to use a spatula to remove because it will not be crunchy like a regular pizza. It can be tough to serve but will taste great as a carb free alternative to regular pizza. Enjoy!

  • Separate the eggs very carefully into two mixing bowls, there must be no yolk in the white.

  • In one bowl, mix together the egg yolks and the Cream Cheese.

  • In the other bowl add Cream of Tartar to the whites and beat the whites on high speed until they are fluffy.

  • Very carefully fold the egg yolk mixture into the egg whites until mixed, but try and not break down the fluffiness of the egg whites too much.

  • Spray a round 15" pizza pan with lip with cooking spray.

  • Pour the mixture into the pizza pan and spread evenly with spatula.

  • Bake on the middle rack for about 15 minutes. You just need to watch the crust until the edges become brown.

  • Take pizza pan out of oven and leave to cool for 20 minutes.

  • Once crust has cooled, start the sauce. In a small sauce pot, Mix together tomato sauce and tomato paste until smooth. Stir in oregano, thyme, garlic powder, and paprika. Simmer about 5 minutes on medium low or until hot.

  • Spread sauce evenly over pizza crust to your liking. There should be enough sauce to make 3-4 pizzas so put left over sauce in a container and refrigerate.

  • Sprinkle shredded mozzarella over top along with any other toppings you prefer.

  • Bake at 300 degrees for about 12 minutes or until cheese has melted or toppings cooked.

Tips

When ready to serve be sure to use a spatula to remove because it will not be crunchy like a regular pizza. It can be tough to serve but will taste great as a carb free alternative to regular pizza. Try folding slices in half to eat and it works nicely.
