It's so good that my kiddos commonly request this for their birthday brunch, too. When I make it I use a whole pound of sausage, and a dozen eggs. All the other ingredients for the egg mix I keep the same. It comes out perfect every single time. I do omit the last step that uses the flour, too. Helpful (1) Eggplant Parmesan 04/22/2011 This was great. I took the advice of others and sweat the eggplant for 30 min. I had to use 3 eggs instead of just 2. I didn't add the honey based on some of the other reviews and I'm glad I didn't. I think it would have been too sweet for my taste. Will be making this regularly for breakfast and for snacks. Helpful (4) Lentil Quiche 02/22/2011 This was yummy. I made some changes due to ingredients that I had on hand and the size of my family. It turned out so well with the changes though that I'll probably keep it that way. I fried up the onion with a little oil and pressed 2 cloves of garlic with it. I used a 16 oz bag of California Blend frozen vegetables instead of the broccoli and I left the tomatoes out all together. I did double up the eggs, milk and lentils and used a 9x13 baking dish for the cooking. We're a family of 5 and I was concerned the the original recipe would not be enough. I didn't have Italian seasoning so I used some parsely, coriander and basil. With the cheese I used 2 cups; 1 cup mixed in with the eggs, lentils and vegetables and the other cup sprinkled on top. I baked for the recommended 45 minutes and that was perfect. Let it set for 10 minutes to cool and then served it right up. It was great!! Thanks for the recipe. I would never have thought to have combined eggs with lentils. Being a vegetarian tasty and nutritious dishes can be hard to come by. This one meets all requirements in one. Thanks again! Helpful (3) Zesty Taco Casserole 02/18/2011 I didn't have all the ingredients so I had to do some substitutions, but it still turned out well. I didn't have any vegetarian chili so I used a can of black beans. I also left out the corn chips all together and just served some tortilla chips on the side. A good staple of a recipe that can be played with and still have good results. It's a keeper in our house. Helpful (8) Beth's Tex Mex Dip 01/19/2011 So, so, so good. I followed the advice of other reviews and added the 1/2 cup of mayo. My kids tend to shy away from things too spicy so I stuck with the green chile peppers as the recipe said. We all really liked it. I served it with tortilla chips, but we ended up dipping veggies in it, too. I can see so many possibilities with this. I have some left over that I'm going to use in a black bean burrito. Yummy!! Thanks for sharing. We'll be having this as a regular snack in our home.
