Delicious! I used 1 1/2 cups of frozen strawberries and thawed them overnight in the refrigerator. After blending them smooth, I reduced them on the stove for at least 30 minutes. I put in 1/2 teaspoon vanilla extract and 1/2 teaspoon almond extract instead of the full teaspoon of vanilla, and I included a pinch of salt. I did put in the final 1/2 cup of powdered sugar. This recipe was just barely enough for one dozen cupcakes. I might make more next time to ensure I have enough. Great recipe! I used this buttercream to top white chocolate-vanilla cupcakes for my daughter’s first birthday!

I wasn’t happy with my result using this recipe. The filling was hugely lacking in cherries, and the amount of corn starch used made it too much of a candy jelly. I like my cherry pie to be a bit more gooey and full of cherries. The flavor was there though.
