Helpful (0) Ratings & Reviews 9 see all Pudding Cookies II 03/30/2014 I'm T2 diabetic, so I try to cut carbs wherever possible-always on the lookout for recipes for cookies, cakes, etc that I can reasonably alter to fit my dietetic needs. I made these cookies with sugar-free pistachio pudding mix, sugar-free applesauce instead of oil, and skim milk instead of the ingredients originally listed. I had to add a couple of packets of Equal sweetener, as the mix was a bit on the bitter side. I added about 1/2 cup of finely ground walnuts to the mix as well. I have to imagine that I didn't get the exact same taste as one would with the original recipe, but I got myself some cookies-and that's a good day for me, lol. Helpful (0) Coconut Custard Pie IV 01/03/2014 Nice little pie. Being a diabetic, I made some changes to try to lower the carb and fat count. I substituted a low cal sugar blend for whole sugar, used skim milk instead of whole, used a lite version of whipped cream, and used fat free evaporated milk instead of the higher fat regular. The pie came out just fine. My husband loves custards, and he couldn't tell that I made the ingredient alterations and really enjoyed it. These small substitutions allow me to a slice satisfies my sweet tooth! Will make again!
