I found it almost cloyingly sweet at THIS quantity (I cannot even imagine it being edible with 2 c. of sugar). So feel free to do 3/4 cup or reduce to 1/2 cup, as I will next time. That said, we all devoured this warm (I called it pudding :)) and raved! It was quite thin, maybe only an inch tall, and as such I would double next time. I didn't use a crust, just a buttered glass pie pan. I microwaved the zucchini three minutes, let it cool a bit, then put everything in the Cuisinart, including the spices. It cooked roughly 30 minutes following the temps in the recipe. So easy. So good. Helpful (0) Squash Casserole 02/07/2018 I followed the advice of the reviewer who suggested basically dumping it all into a pan and baking it for an hour...turned out a nice easy yummy side dish (but I love squash!)! I used zucchini and went a little easy on the butter. Good! Would make again! Helpful (0) Slow Cooker Balsamic Chicken 12/13/2014 I make this from time to time now cause it's soo easy...esp. when nothing's defrosted... and I always have this stuff on hand. It is a good weeknight dinner. Not my favorite meal ever, but decent and worth a try. I DO use frozen chicken breasts (yay). Helpful (0) Zucchini Appetizers 12/13/2014 After reading these reviews, I increased the bisquick, doubled the garlic, grated the zucchini, added cheddar cheese (per a similar recipe). I accidentally omitted the oil but didn't miss it (oops!) & baked in a mini-muffin tin about 17 minutes. Made an easy & decent appetizer :) that was more biscuit-like, less egg-y than others mention. I definitely liked it and would re-make, but I don't know that it would get raves, even if followed exactly?? We call it "Pumpkin Stuff" at my house now :). It's more like a custard?? My healthier version: I cut way down on the sugar (use agave syrup or a little brown sugar instead), use about 2 T. of butter, use whole wheat flour, regular 2% milk instead of evaporated. Rating 4 instead of 5 not for taste but simply because it's not really a casserole and is very dessert-like. Great way to serve a veggie to picky kids, though! We enjoy this.
