I used olive oil and oregano to flavor the potato. Another reviewer added a tip to place a bit of water in bottom of plate to prevent drying out and it worked. Will be cooking another one tomorrow. Helpful (0) Sweet Potato Casserole Dessert 11/26/2015 Yummy! Adjusted the recipe to 35 servings the first time for my son's school event. The second time was even better with an adjustment to 6 servings just for me. I did not make any substitutions in the recipe. The crunchy texture of the pecans complements the sweet potatoes and sugar. This will definitely become a go-to dish for gatherings.
