A great dish that brings together fall produce and fall flavors. Use as a main dish, serving with cornbread on the side, or use as a side dish. For a vegetarian version, use vegetarian sausage. (There are some excellent veggie sausages on the market that go VERY well with this recipe!!!)

  • Preheat oven to 425 degrees F. Line baking sheet with foil and very lightly coat with olive oil.

  • Cut butternut squash in half. Scoop out seeds, and place on baking sheet. Lightly coat squash with olive oil, adding salt and pepper. Roast in oven for about an hour, or until tender.

  • Begin cooking the sausage in a medium-sized skillet. Add in onion, apples, and garlic.

  • Add in salt, pepper, sage, cinnamon, nutmeg, and red pepper flakes. Cook contents of skillet until the sausage is cooked fully and is slightly crispy around the edges.

  • After cooling slightly, scoop out the insides of the squash. combine with the contents of the skillet and serve.

Tips

1. Remember that the sausage and apple mixture will have a strong flavor because of the spices. However it will all balance out due to the fact that the butternut squash is mild. 2. I realize that as a main dish, the presentation is not... pretty. However, this tastes wonderful. If anyone has suggestions for a better presentation or way to serve this, I'd love to hear it! :) 3. This is great as a side dish for a holiday meal. The colors are impressive and it brings together lots of produce!
