I sliced into the roast, but didn’t cut all the way through, keeping the fat and some of the bottom meat intact, and rubbed the spices onto all the surfaces, allowing the cuts to trap the garlic. Turned out awesome! We will definitely be making this again. So far I’ve used the meat for pork tacos. The ones on parchment taste sweeter. Helpful (0) Janet's Rich Banana Bread 07/03/2016 Altered this recipe to be more like what I usually make, b/c I was without my recipe. Used 1/4 c (1/2 stick) butter, added 1 cup vegetable oil and 1 tsp baking powder, removed the nuts and sour cream, and mashed the bananas. I doubled this recipe and baked in 8x11 dish. Turned out great, very moist, and I'll absolutely make it again. It definitely is strong so beware. My husband doesn't like them so I made myself one as follows: 0.5oz simple syrup/1oz lemon juice/2oz whiskey and put it in a tumbler with ice. Yum.
