It was absolutely DELICIOUS! Everyone who ate said all the meat was flavorful and tender. They keep asking for the kabobs again! Only problem is I need another hog!!!! Zucchini, squash, onions, cherry tomatoes were excellent in the marinade as well!!! I use this as my go-to marinade. I was looking for something to use the cilantro lime chicken breast (from this site) in. Added black olives , cumin, garlic, a sprinkle of red pepper flakes, and black beans and paired it with the cucumber salad from this site. What a great lite meal for a warm evening! They especially like it when I toss in some spinach, green peas, or green beans. I toss everything in the stand mixer, so it's very easy. I bake in small muffin tins, and have had to reduce the cook time to around 20-30 minutes. This is a go to for us!
