August 2024 SharonC reviewed Sarah S’s Joel's Jerk Chicken Pineapple Pasta Recipe. 03/23/2020 I made this for my husband. I don't like spicy food. I had caribbean jerk seasoning and he loves spicy food so I made it for him. He absolutely loved it. I did not have the coconut so it's the only change to the recipe that I made. His words to me was "Remember this recipe to make it again for me!" So thanks for a great, easy recipe! When I saw this recipe I knew I had to give it a try. OMG I'm so glad I did. I followed the recipe exactly and it came out soooo good. Even my husband who thinks he doesn't like eggplant tried a piece and then went back for more. And this was really so easy to make. What a great dinner with some garlic bread.I will definitely make this again. Thank you for such a great recipe. My air fryer is my new favorite toy so I appreciate new recipes to try. Instead of 2 cans of white beans I used 1 can of white and 1 can of black beans just due to personal preference. I also used a can of cream of chicken soup rather than chicken broth just to make it a little creamer/less runny. I also used ground cilantro rather than oregano. I think this recipe was exceptionally good and was very quick to put together. I served it over white rice with fiesta cheese, sour cream and crushed tortilla chips on top. My husband looked at it and said "ugh" fruit in it! He still tried it and liked it so much he went back for seconds. He said he couldn't believe it was so good..I didn't add the pineapple but added some sliced kalamata olives for the saltiness, cubes of swiss cheese and threw some macadamia nuts on top. I was so impressed with this recipe.
