I used quinoa instead of rice (follow directions on pkg) and a can of drained diced tomatoes instead of fresh as that's what I had on hand. I just put the empty peppers in the oven to soften them up while it was preheating, maybe 10 mins? Good flavor, nice and zesty, and best of all, healthy! Will make again for sure. Helpful (4) Slow Cooker Cinnamon Apple Steel Cut Oats 01/16/2013 I liked this recipe a lot and next time I might add a couple more fresh apples as I'm an apple addict. Based on other reviews I reduced the amount of water to just under 7 cups and it came out just right. Cooked overnight on low (6 hours) and then let it rest on warm until I was awake and ready for breakfast. The oatmeal closest to the sides of the crockpot was a bit overdone, but that was minor and I didn't stir this at all while it was cooking, so what else would I expect. Will make this again for sure. I substituted the following to make it slightly lower in calories: replace 1/2 cup flour with 1/2 cup whole wheat flour, 2 tsp pumpkin pie spice instead of other spices, 15 oz of pumpkin puree, and 1/2 cup applesauce instead of buttermilk and butter. I made these as muffins instead of bread - same temperature, bake for 20-25 mins. Super moist and delicious! Helpful (2) Healthier Mom's Zucchini Bread 08/28/2012 These came out great! I substituted the milk and oil for 1 cup of applesauce, and I was out of vanilla extract so I used 3 tsp of maple syrup. I also made half the recipe in a bread pan and half in muffins. The muffins cook at the same temperature for about half the time. Delicious! Helpful (17) Maple Glazed Tofu 03/15/2012 Delicious! I marinated the tofu in soy sauce for about 15 mins and used orange juice instead of pineapple (I'm allergic). I also added a bunch of steamed veggies to the glaze just before it was done reducing. I used a 1 pound tenderloin, so it only needed to cook on low for about 5 hours, and then added Sweet Baby Ray's Hickory BBQ sauce. So delicious and tender!
