I didn’t have cornstarch so I sprinkled flour and mixed it with the veggies. The sauce wasn’t as thick as others described with flour. I also added a dash of sugar to cut the acidity of the tomatoes. Instead of serving it with rice, I used riced cauliflower as the bed for the shrimp. Next time, I think I’ll dollop it over grits. Yum!
