I just made it again, absolutely sooooo delicious. It's so good warm when just made, actually seems to get better with a day or so in the fridge. I used very lean bacon, and a bit more than the recipe calls for. Helpful (0) Bill Mulholland reviewed Chef John's Italian Meatballs Recipe. 04/17/2021 It is a good recipe, yes, I made it. I would caution, tho, to be sure you obtain very lean ground beef, 93% or better, and very lean ground pork, online, Farmer John notes 95%. I made the error of buying a higher fat content pork (did buy very lean GB, tho). The higher pork fat, was a bit distasteful. I wound up freezing the meatballs, then bagging them for freezer. When I use them (today in Spaghetti), I boil the meatballs, a low boil so they do not fall apart), that will boil out much of the fat, then drain and use them, after boiling at least for me, taste is still quite good. Best still to get very lean ground pork. When I make them again with very lowfat ground pork, I will provide an updated review.
