  • Preheat oven to 275 deg F.

  • Combine sugar, honey and water in a microwave safe bowl and microwave for about 2 minutes until dissolved.

  • Add the salt and vanilla to the sugar mixture.

  • Place oats, nuts and coconut in a large mixing bowl and add the sugar mixture and mix very thoroughly.

  • Spread on a cookie sheet lined in foil or parchment.

  • Bake at 275 deg F for 1 hour, stirring every 15 minutes.

  • Let granola cool completely and store in an airtight container.
