When I was growing up, my neighbor was from Sicily and was the most incredible chef ever! She was born in 1910 and learned to cook at her grandmother's knee. There was no measuring, only tasting and adjustIng as needed. I must agree that this is an exact copy of her recipe and is about as awesome as pasta, cheese and black pepper can get! A true original, ethinically-correct recipe'. And by the way, the pasta is irrelevant - prepare what you like - the ingredients are the WOW factor. Helpful (3) Sweet and Spicy Jerk Shrimp 06/21/2023 The pineapple ruined this dish. Could not taste the shrimp at all! Will make again but WITHOUT the pineapple! If the shrimp is the most expensive ingredient in this recipe, then it's taste should be front and center. It was a huge hit with the picky grandchildren all going back for seconds! And who cares about calories? Helpful (1) Cajun Seafood Pasta 06/14/2023 You will never find neither thyme nor basil in a Cajun recipe. Not saying the flavors are not beneficial, just don't call it Cajun. Also, don't understand "al dente" or as we refer to it, " undercooked". The only people I have ever heard being pro "al dente" are celebrity chefs. My family AND friends prefer pasta that is thoroughly cooked, easy to chew and digest. Al dente is nothing more than arrogance in the kitchen...just my opinion... Helpful (1)
