Very good dinner. This was easy and fun to make. Just let me add a little tip; Since some corn tortillas that are bought from the store, has been on the shelf and dried out. As such, the tortillas may be brittle and fall apart when you roll the enchiladas up with the filling. I suggest that you take a little bit of time to slightly heat the tortillas up prior to rolling. I used a little bit of olive oil, by brushing it onto the tortillas while heating them up made the tortillas easier to roll with stuffing in the enchiladas. It also allows the cheese and spices to soak into the tortillas easier. Either way, I enjoyed the recipe
