I forgot that I had already bought beets, and bought more. Wanted a good beet soup recipe, and this didn't disappoint. Only changes I made were chicken in place of beef broth (don't eat beef) and added a carrot, for nutrition. Soup came out nice and creamy without any cream or milk. Hot day, so ate cold with sour cream topping. Absolutely delicious!

There was nothing really wrong with this recipe, but it lacked heat and spice. Even with my little tweaking, it was still bland. My grandson poured a TON of tabasco to give it some more heat. The only real changes I made were brown rice (need more time and frequent checking for liquid level), added a bit of corn and chopped carrot, and a can of diced green chilies. Next time I will add red pepper flakes, cumin, Worcestershire sauce, and a little Adobo to bring out the flavor. My D-I-L did like it, though, as she is not into heat as much as my grandson and I. Will also try with shrimp and sausage.

Very nice and moist. Made more herb mixture, added thyme, and rubbed a ton of it under skin. With the oil, salt and pepper with herb on skin, didn't need broiler, as it crisped up nicely. I prepped chicken and refrigerated it for about 5 hours before baking. Will do again.

Followed recipe exactly except added a little more cilantro. Usually tweak recipes after trying, but this is right on as is. Heat can be adjusted for those who prefer a milder taste, and salt could be added for some. Very fresh tasting, and even with all the chopping, easy. Maybe next time I will do as others did and use food processer.

Excellent. Only changes were more muhsrooms (we love them) and, as others suggested, nearly doubled the marsala (skipped cooking sherry altogether) for additional sauce. Next time, may either slice or cube chicken, perhaps add thinly sliced onions, for another take. Will be making again next week for dinner guests.

I marinated it for about 10 hours and it was one of the most tender and moist chicken ever! It did not have the color, but that is because I baked it at 350 degrees for 15 minutes. A real winner! Will do again for a dinner party coming up in a couple of weeks.
