I did it exactly as the recipe dictates but used homemade fresh fettucine, just cooked them al dente. I hate it when people review a recipe and say that it wasn't that great but they changed the recipe radically. If you change anything in the original recipe, you lose the right to complain or review in my opinion. This was a reat recipe.

Although tasty, you cannot call this “truly authentic”! True Italians NEVER put cream in carbonara…it is simply cheese (typically pecorino romano) and egg (and some pasta water) that lends the creaminess to the dish. Please update the description of this recipe, as this is not authentic.

What i did was all the steps, but added 2 per cent milk, 1/4 cup and a 1/2 cup of the reserved hot pasta water.. i also stirred the pasta in a in a heated bowl to help further the cooking.
