We sub’d out all-purpose and whole wheat flours for almond and spelt (what we had in pantry). Reduced sugar by two tablespoons. Used apple cider vinegar (what we had) instead of apple cider, 1/4 cup as recipe noted, and came out fine. Overall muffin was super light and sweet enough. Recommend not using muffin cup liners are there is less to eat! These are inhaled four to five at a time! Will reduce salt as well next time and add some chili or cayenne for a kick. Keep stored in airtight container as nuts will quickly absorb moisture and lose their light crisp. I substituted some thick homemade cranberry sauce instead of the jam, sans the nuts, and it was a perfect Thanksgiving app. This will be my new go to recipe for parties. Helpful (1) Green Beans 11/30/2014 Made these for Thanksgiving lunch and should have doubled the recipe as it was one of the few sides with no leftovers! Used fresh beans and microwaved slightly per another reviewer's suggestion. Added 1/4 tsp of cayenne pepper instead of black pepper which gave it a nice kick. And mixed dry ingredients, chopped up apple maple smoked bacon night before and prepared in the a.m. Helpful (5) Big Soft Ginger Cookies 11/30/2014 Fantastic. Just made them with my preschool daughter. Substituted the 5 TBs of brown sugar instead of the molasses and water. Although the batter was a little crumbly, we squeezed the last balls of dough together. Under bake to 8 mins if you use a convection oven, for chewy, otherwise you get ginger snaps, which are tasty too. Will try original recipe and substitute water with either OJ or liqueur. Helpful (0)
