The only change I made was to double the gravy so there would be enough for the mashed potatoes I served it with. Make sure to double the flour as well as the broth and sherry, otherwise the gravy will just be too thin. Excellent, easy recipe. Helpful (0) Chicken Quesadillas 06/05/2016 Lots of prep, but once that's done, the assembly is quick and easy. I made this as-is for the kids, and a spicier version (with jalapenos and spicy cheese) for the grown-ups. The only substitutes I made were to use low-sodium fajita seasoning and a de-boned and shredded (by me) store-bought rotisserie chicken for the meat. Great recipe. Will make again. Helpful (1) Lentil Soup with Lemon 01/01/2016 This recipe is very similar to the recipe on the bag of red lentils that I bought at the local halal market. I doubled it and used my own homemade chicken bone broth. If you use homemade broth, it needs more salt than is called for in the recipe, but if you're using store bought broth (which is what it calls for), then it probably doesn't. With the recipe doubled, I used the juice of a whole lemon and in place of fresh cilantro, I used dried. I liked the serving suggestion of sprinkling chili powder over the individual bowls, but with bone broth, it does NOT need a drizzle of olive oil. I'm sure that if you use the boxed broth, it would really benefit from it though. Instead of transferring half the soup to a blender, I just used my immersion blender right in the pot, and only ran it a couple of times to keep it slightly chunky. It was perfect. My family loved this, and I will definitely be making it again.
