Chocolate Santafereño (Colombian-Style Hot Chocolate)

My Colombian grandmother (known as abuelita or "Abi" for short) made this treat for my mom and aunt when they were kids. The cheese gets gooey and stringy, and you can use a spoon to dig out little bites of salty cheese that pair perfectly with the bittersweet hot chocolate. You can use mozzarella, shredded Swiss cheese, or crumbled Oaxacan cheese.

Ingredients

Original recipe (1X) yields 1 servings

  • 1 cup whole milk

  • 2 ounces bittersweet or dark chocolate(85% cacao)

  • 1 pinch cinnamon

  • 1 pinch ground cloves

  • 1 (1-ounce) mozzarella cube

Directions

  1. Heat milk in a small saucepan over medium heat until just boiling, 3 to 4 minutes. Add chocolate, cinnamon, and cloves. Cook, whisking often, until chocolate is melted and milk is heated through, 1 to 2 minutes.

  2. Pour into a mug and add mozzarella cheese. Let stand until cheese begins to melt, about 1 minute. Serve immediately.
