A steak is a meat generally sliced perpendicular to the muscle fibers, potentially including a bone. Exceptions, in which the meat is sliced parallel to the fibers, include the skirt steak that is cut from the plate, the flank steak that is cut from the abdominal muscles, and the Silverfinger steak that is cut from the loin and includes three rib bones. When the word "steak" is used without qualification, it generally refers to a beef steak. In a larger sense, there are also fish steaks, ground meat steaks, pork steak and many more varieties.
As a "top-quality ingredient", beef steaks "are perfect if properly grilled", but they can be pan-fried, or broiled. Steak is often grilled in an attempt to replicate the flavor of steak cooked over the glowing coals of an open fire. Steak can also be cooked in sauce, such as in steak and kidney pie, or minced and formed into patties, such as hamburgers.
Seasoning is the process of adding salt, herbs, or spices to food to enhance the flavor.
General meaning
Seasonings include herbs and spices, which are themselves frequently referred to as "seasonings". However, Larousse Gastronomique states that "to season and to flavour are not the same thing", insisting that seasoning includes a large or small amount of salt being added to a preparation. Salt may be used to draw out water, or to magnify a natural flavor of a food making it richer or more delicate, depending on the dish. This type of procedure is akin to curing. For instance, seasalt (a coarser-grained salt) is rubbed into chicken, lamb, and beef to tenderize the meat and improve flavor. Other seasonings like black pepper and basil transfer some of their flavor to the food. A well designed dish may combine seasonings that complement each other.
In addition to the choice of herbs and seasoning, the timing of when flavors are added will affect the food that is being cooked.
In some cultures, meat may be seasoned by pouring sauce over the dish at the table. A variety of seasoning techniques exist in various cultures.
Seasoning is the process of treating the surface of a saucepan, wok, crepe griddle or other cooking vessel with a stick-resistant coating formed from polymerized fat and oil on the surface.
Seasoning is desirable on cast-iron cookware and carbon steel cookware, because otherwise they are very sticky to foods and rust-prone. It is generally not desired on other types of cookware either for cosmetic reasons or because the chemical composition of the pan already results in a non-stick surface.
Methods of seasoning
A new pan (bare metal) will grab food tightly, and must either be oiled before cooking or seasoned. This base coat is initially created by a process of layering a very thin coat of oil on the pan. Then, the oil is polymerized to the metal's surface with high heat for a duration. The base coat will darken with use. This entire process is known as "seasoning". The colour of the coating is commonly known as its "patina".
To season a pan (e.g., to season a new pan, or to replace damaged seasoning on an old pan), the following is a typical process:
Wood drying (also seasoning lumber or wood seasoning) reduces the moisture content of wood before its use. When the drying is done in a kiln, the product is known as kiln-dried timber or lumber, whereas air dying is the more traditional method.
There are two main reasons for drying wood:
Woodworking: when wood is used as a construction material, whether as a structural support in a building or in woodworking objects, it will absorb or desorb moisture until it is in equilibrium with its surroundings. Equilibration (usually drying) causes unequal shrinkage in the wood, and can cause damage to the wood if equilibration occurs too rapidly. The equilibration must be controlled to prevent damage to the wood.
Wood burning: when wood is burned, it is usually best to dry it first. Damage from shrinkage is not a problem here, and the drying may proceed more rapidly than in the case of drying for woodworking purposes. Moisture affects the burning process, with unburnt hydrocarbons going up the chimney. If a 50% wet log is burnt at high temperature, with good heat extraction from the exhaust gas leading to a 100°C exhaust temperature, about 5% of the energy of the log is wasted through evaporating and heating the water vapour. With condensers, the efficiency can be further increased; but, for the normal stove, the key to burning wet wood is to burn it very hot, perhaps starting fire with dry wood.

This is my quick and easy recipe on how to cook the most PERFECT steak!

INGREDIENTS
12oz sirloin steak
30g unsalted butter
2 garlic cloves
3 sprigs of rosemary
Salt
Black pepper
METHOD
1. Rest the steak at room temperature after seasoning (approx 30-45mins)
2. Pat dry with a paper towel
3. Season with salt and black pepper
4. Rub in well
5. Oil in a cast-iron skillet on a medium-high heat
6. Crush and peel the garlic cloves
7. Cook the 12oz steak for 6 minutes, turning over every 1 minute 30 seconds
(Use a cooking thermometer if required - Medium cooked = 140F/60C)
8. Add butter, garlic and rosemary for the remaining 2 minutes

This is my quick and easy recipe on how to cook the most PERFECT steak!

INGREDIENTS
12oz sirloin steak
30g unsalted butter
2 garlic cloves
3 sprigs of rosemary
Salt
Black pepper
METHOD
1. Rest the steak at room temperature after seasoning (approx 30-45mins)
2. Pat dry with a paper towel
3. Season with salt and black pepper
4. Rub in well
5. Oil in a cast-iron skillet on a medium-high heat
6. Crush and peel the garlic cloves
7. Cook the 12oz steak for 6 minutes, turning over every 1 minute 30 seconds
(Use a cooking thermometer if required - Medium cooked = 140F/60C)
8. Add butter, garlic and rosemary for the remaining 2 minutes
9. Baste the steak with the melted butter
10. Sear the fat
11. Leave to rest for 5 minutes
12. Season with salt and black pepper
