A food truck is a large vehicle equipped to cook and sell food. Some, including ice cream trucks, sell frozen or prepackaged food; others have on-board kitchens and prepare food from scratch. Sandwiches, hamburgers, french fries, and other regional fast food fare is common. In recent years, associated with the pop-up restaurant phenomenon, food trucks offering gourmet cuisine and a variety of specialties and ethnic menus, have become particularly popular. Food trucks, along with portable food kiosks and food carts, are on the front line of the street food industry that serves an estimated 2.5 billion people every day.
History
In the US, the Texas chuckwagon is a precursor to the American food truck. In the later 1800s, herding cattle from the Southwest to markets in the North and East kept cowhands on the trail for months at a time. In 1866, the "father of the Texas Panhandle," Charles Goodnight, a Texas cattle rancher, fitted a sturdy old United States Army wagon with interior shelving and drawers, and stocked it with kitchenware, food and medical supplies. Food consisted of dried beans, coffee, cornmeal, greasy cloth-wrapped bacon, salt pork, beef, usually dried or salted or smoked, and other easy to preserve food stuffs. The wagon was also stocked with a water barrel and a sling to kindle wood to heat and cook food.

The day starts at 1am when co-owner Christopher Yu picks up the truck and stakes out a parking spot in Brooklyn or Manhattan. After parking the truck, Chris turns on the generator, which powers the food truck's refrigerator and freezer. Because of New York City regulations that state someone must remain in the truck while it's parked, Chris will camp out for the rest of the night. LA Food Truck Serves The Juiciest Tacos | Food Insider
Birrieria San Marcos has some of the best tacos in Los Angeles thanks to their specialty: birria tacos. These tacos are bathed in broth from a stew, consomme, and the meat is slow cooked in it for hours. The tacos are then served crispy off the grill with a side of that same stew like a Mexican French Dip! They are some of the most flavorful tacos in LA, and Birrieria San Marcos has become popular on Instagram. We went to see what these tacos are all about and were seriously impressed.

The Only Ethiopian Food Truck in NYC | Street Food Icons
Eden Gebre Egziabher owns and operates Makina Cafe, the first and only Eritrean and Ethiopian food truck in New York City. Driven by her passion for the foods she ate as a child growing up in Addis Ababa, Eden serves Eritrean and Ethiopian staples like injera bread, chicken and beef tibs, misir (spicy red lentils), tikel gomen (cabbage with carrots and potatoes), gomen (collard greens), and sambusas, which are similar to samosas. Eden, born and raised in Ethiopia from parents of Eritrean descent, aims to use Makina Cafe to celebrate her two countries of origin and their cuisines.

After parking the truck, Chris turns on the generator, which powers the food truck's refrigerator and freezer. Because of New York City regulations that state someone must remain in the truck while it's parked, Chris will camp out for the rest of the night. He can't sleep in the back of the truck and must remain at the wheel. The truck doesn't have heat or air conditioning, which can make for tough winters and summers.
Morning prep starts at 7 am when the team prepares salads, fries chicken, cooks rice, and labels containers for lunch, which Yumpling starts serving at 11:30 am. Some customers begin lining up as soon as 11 am. On the morning we spent with Yumpling there was a line down the street five minutes after they opened.
The truck doesn't pay rent in the traditional sense, but it does accumulate parking tickets throughout the day. Parking tickets for the truck range in price from $65 to hundreds of dollars. Some days the truck receives two or three tickets, while on others it manages to avoid parking fines.

Driven by her passion for the foods she ate as a child growing up in Addis Ababa, Eden serves Eritrean and Ethiopian staples like injera bread, chicken and beef tibs, misir (spicy red lentils), tikel gomen (cabbage with carrots and potatoes), gomen (collard greens), and sambusas, which are similar to samosas. Eden, born and raised in Ethiopia from parents of Eritrean descent, aims to use Makina Cafe to celebrate her two countries of origin and their cuisines.

A food truck is a large vehicle equipped to cook and sell food. Some, including ice cream trucks, sell frozen or prepackaged food; others have on-board kitchens and prepare food from scratch. Sandwiches, hamburgers, french fries, and other regional fast food fare is common. In recent years, associated with the pop-up restaurant phenomenon, food trucks offering gourmet cuisine and a variety of specialties and ethnic menus, have become particularly popular. Food trucks, along with portable food kiosks and food carts, are on the front line of the street food industry that serves an estimated 2.5 billion people every day.
History
In the US, the Texas chuckwagon is a precursor to the American food truck. In the later 1800s, herding cattle from the Southwest to markets in the North and East kept cowhands on the trail for months at a time. In 1866, the "father of the Texas Panhandle," Charles Goodnight, a Texas cattle rancher, fitted a sturdy old United States Army wagon with interior shelving and drawers, and stocked it with kitchenware, food and medical supplies. Food consisted of dried beans, coffee, cornmeal, greasy cloth-wrapped bacon, salt pork, beef, usually dried or salted or smoked, and other easy to preserve food stuffs. The wagon was also stocked with a water barrel and a sling to kindle wood to heat and cook food.
