FRESH CHEESE – ANTHOTYRO
INGREDIENTS
2 l full fat pasteurized milk
200ml full fat cream
70ml white vinegar (you may substitute with lemon juice)
Salt to taste
You may preserve this cheese in the refrigerator for up to a week.
*This cheese is creamy and takes its full texture and taste the following day. If you let it drain for a longer period of time, it becomes hard and you may also grade it.

Making Fresh Mozzarella Cheese from our Raw Milk
Our dairy cow, June, produces more milk than our family of 9 can drink. One of my favorite ways to use it all up is with homemade mozzarella cheese. It takes 30 minutes and is very easy for beginners. I like to make a protein rich soup with the resulting whey. Though you can make the cheese with whole milk, I prefer to first take the cream off and make grass-fed raw butter!
Here is the recipe I used
1 1/2 teaspoons citric acid dissolved in a little water
1/4 teaspoon animal rennet dissolved in a little water
1 gallon milk
1. Add the citric acid/water mixture to a large pot. Add the milk to the pot. Heat to 100 degrees.
2. Remove from the heat.
3. Add the animal rennet/water mixture. Incorporate throughout, making sure to get it all the way to the bottom of the pot but not agitating it ...

I love homemade cheese. If you are a fan of cheese and like making things at home give this a try. Please note this is NOT traditional Italian Buffalo Mozzarella, nor is it a traditional American mozzarella, it is called a "quick mozzarella" and is the easiest of the mozzarellas to make. FRESH CHEESE – ANTHOTYRO
INGREDIENTS
2 l full fat pasteurized milk
200ml full fat cream
70ml white vinegar (you may substitute with lemon juice)
Salt to taste
You may preserve this cheese in the refrigerator for up to a week.
*This cheese is creamy and takes its full texture and taste the following day. If you let it drain for a longer period of time, it becomes hard and you may also grade it.

ΦΡΕΣΚΟ ΣΠΙΤΙΚΟ ΤΥΡΙ – ΤΥΠΟΥ ΑΝΘΟΤΥΡΟ
ΥΛΙΚΑ
2 λ παστεριωμένο γάλα πλήρες
200μλ κρέμα γάλακτος 35%
70μλ λευκό ξύδι (μπορείτε να αντικαταστήσετε με χυμό λεμονιού)
Αλάτι κατά προτίμηση
ΕΚΤΕΛΕΣΗ
Βάζουμε το γάλα και την κρέμα γάλακτος να ζεσταθούν.
Μόλις δούμε τις πρώτες φουσκαλίτσες χαμηλώνουμε τη φωτιά στο μίνιμουμ και ρίχνουμε το ξύδι.
Ανακατεύουμε λίγο κι αφήνουμε το γάλα να διαχωριστεί, αφήνοντας χώρια το υγρό και δημιουργώντας την πηχτή κρέμα.
Μετά από λίγα λεπτά κι αφού έχει διαχωριστεί πλήρως, (θα δούμε το υγρό να γίνεται κάπως διάφανο), παίρνουμε με τρυπητή κουτάλα το παχύ μέρος και το τοποθετούμε σε τσαντίλα μέσα σε σουρωτήρι, με άλλο σκεύος από κάτω για να φεύγουν τα υγρά (ορός γάλακτος).
Αφού έχουμε αφαιρέσει το μεγαλύτερο μέρος του τυριού, ρίχνουμε σιγά, σιγά και το υπόλοιπο και το αφήνουμε λίγο να σουρωθεί.
Σφίγγουμε την τσαντίλα μας και στραγγίζουμε το πολύ υγρό, την δένουμε και την κρεμάμε κάπου να στραγγίσει περισσότερο για περίπου 15-30 λεπτά.
Όσο το τυρί μας είναι ακόμη ζουμερό ανοίγουμε την τσαντίλα, αφαιρούμε τυχόν τυρί που έχει κολλήσει στο ύφασμα και αλατίζουμε.
Ανακατεύουμε λίγο και τοποθετούμε σε ειδικό σκεύος για τυρί ή αφήνουμε μέσα στην τσαντίλα, οπότε και το τυρί μας θα βγει στρογγυλό.
Αφού κρυώσει αρκετά τοποθετούμε στο ψυγείο για 2-3 ώρες και ξεφορμάρουμε.
Το τυρί μας είναι κρεμώδες και μαλακό και παίρνει την πλήρη υφή του και γεύση την επόμενη μέρα.
*Αν το αφήσουμε περισσότερο χρόνο να στεγνώσει (στραγγίζοντάς το) γίνεται πιο σκληρό και τρίβεται.
Η συνταγή δίνει γύρω στα 450γ τυρί.

Making Fresh Mozzarella Cheese from our Raw Milk

Our dairy cow, June, produces more milk than our family of 9 can drink. One of my favorite ways to use it all up is with homemade mozzarella cheese. It takes 30 minutes and is very easy for beginners. I like to make a protein rich soup with the resulting whey. Though you can make the cheese with whole milk, I prefer to first take the cream off and make grass-fed raw butter!
Here is the recipe I used
1 1/2 teaspoons citric acid dissolved in a little water
1/4 teaspoon animal rennet dissolved in a little water
1 gallon milk
1. Add the citric acid/water mixture to a large pot. Add the milk to the pot. Heat to 100 degrees.
2. Remove from the heat.
3. Add the animal rennet/water mixture. Incorporate throughout, making sure to get it all the way to the bottom of the pot but not agitating it too much.
4. Still the milk, and add a lid. Allow it to sit for ten minutes.
5. Cut the curds.
6. Strain off the whey.
7. Press out any excess whey.
8. Add the cheese back to hot water and stretch it. (You could also heat it up in a microwave.)
9. Stretch it a few more times and add salt to taste.
Enjoy!

INGREDIENTS
Milk (Raw) - 2 liters (Cow/ buffalo)
Lemon juice/ vinegar - 5 to 6 tbsp
FOR MAKING PROCESSED CHEESE :-
Fresh cheese - 240 g (from 2 liters milk)
Citric Acid - 1 tsp (5g)
Baking Soda - 1 tsp (5g)
Water - 1 tbsp
Salted Butter - 1/4 cup (50g)
Milk (Boiled)- 1/3 cup (80 ml)
Salt - 1/4 tsp or as per taste

Instructions:
1. Gently warm the milk in a pot over low heat, stirring consistently. Aim for a temperature between 45 to 50 degrees Celsius, or until it's lukewarm. Turn off the heat and gradually add vinegar or lemon juice while stirring, until the milk curdles and separates into solids and whey.
2. Strain the curdled milk to remove excess whey, squeezing out as much liquid as possible.
3. Mix citric acid and water in a bowl, then add baking soda to create a clear sodium citrate solution.
4. Blend the strained cheese, sodium citrate solution, butter, milk, and salt in a blender until smooth.
5. Transfer the cheese mixture to a heatproof bowl and double boil it for 5 to 8 minutes.
6. Grease a plastic mold with butter.
7. Pour the blended mixture into the greased mold and let it cool at room temperature before placing it in the refrigerator for about 5 to 6 hours to set.
