What is so special about Chablis wine? What are the differences between Chablis and Chablis Premier Cru?
There are four applications in the Chablis region: Petit Chablis, Chablis, Chablis 1er Cru, and Chablis Grand Cru. All Chablis wine is produced from one grape variety, which is Chardonnay. The first difference between Chablis and Chablis Premier Cru is the soil. The vineyard of Chablis are located or Portmaldian soil which is Chablis 1er Cru is located mostly of Kimmeridgian soil.
The second differences between Chablis & Chablis 1er Cru is the average age of the vines. Generic Chablis is produced from vines 4-6 years old, which is Chablis 1er Cru is produced from 10-12 years old vines.

Master of Wine Explains CHABLIS, the Purest Expression of Chardonnay
Chablis is perhaps the best expression of Chardonnay. Chablis is a town than is well north of the rest of Burgundy, about 100K or 60 miles, not too far from the Champagne regions. The wines are 100% Chardonnay, it's the only permitted grape variety. Chablis is the ideal pair with shellfish and lighter poultry dishes. There is a hierarchy from top to bottom of Grand Cru, Premier Cru (sometimes called 1er Cru), Chablis and Petit Chablis. For the most part, I pay little attention to Petit Chablis. Chablis is perhaps the best expression of Chardonnay. Chablis is a town than is well north of the rest of Burgundy, about 100K or 60 miles, not too far from the Champagne regions. The wines are 100% Chardonnay, it's the only permitted grape variety. Chablis is the ideal pair with shellfish and lighter poultry dishes. There is a hierarchy from top to bottom of Grand Cru, Premier Cru (sometimes called 1er Cru), Chablis and Petit Chablis. For the most part, I pay little attention to Petit Chablis. La Chablisienne is the single largest land holder in Chablis, at all quality levels. It's a co-operative and one of the very best in all of Europe with excellent standards. Good distribution across many markets.
