The residents of the Cabardes region produced wine as early as the Roman occupation, but the modern appellation was made official only in 1999. It had previously been a VDQS wine under the alternative names Cabardès and Côtes du Cabardès et de l'Orbiel since 1973. The unique requirement of blending Mediterranean varietals and Atlantic varietals is the result of experimentation in cultivation and blending that began in the late 1970s.
As of 2007, these wines were relatively unknown in France, and their export, in terms of volume, is exceptionally rare due to limited production quantities and a relatively small marketing budget.

Mercredi 23 Janvier 2019... Chaque hiver Pradelles-Cabardès se pare d'un magnifique manteau neigeux, ma balade de ce mercredi après-midi confirme mes dires. Quel calme, quel silence! Chaudement vêtu j'ai arpenté les rues du village et le petit lac situé à ses pieds. Les paysages enneigés se succèdent sans âme qui vive, loin de l'agitation des beaux jours... Voilà! C'était une petite balade sympa un mercredi après-midi sous la neige.

The colour is quite deep, still impenetrable with a rather black core. The nose is fairly intense. I would say it has a slightly old-fashioned sharp to it with some stable notes, some leather, slightly funky spiciness, together with ripe dark fruit, plum, dark berries and leather. The palate is generous and ripe with a quite full body. It is still a bit youthful with present tannin. I suppose in terms of texture we should give it another year to round off some of that tannic sensation. Attractive fruit there, with dark fruit yet with a good acidity. Then we have some more of that slightly animal gamey spiciness, some raw meat, some leather. Some dried spices on the finish. Medium to long finish. With a slight presence of those tannins.
