Majority of the wines out there are not meant for aging at all, they are meant to be enjoyed young and fresh with their bright fruit still present on the nose and palate. However, the greatest wines can be aged and will only benefit from spending extra time in bottle, hence developing complexity. Is OLD WINE better? - What happens when wines are cellared and age!
What happens as wine ages and gets older, and which wines should you cellar? First off, not all wine are meant to lay down. There are a select few grapes like Nebbiolo, Cabernet Sauvignon. Chardonnay, Riesling, and a few others that develop well. For a wine to age, you need the right grape, the right producer, and the right vintage. Once that's all accomplished, then the fun begins. As wine ages two things change; flavor and texture. Flavors start to turn from primary and fruity, to earthy and tertiary. The texture changes from bright and tannic to smooth and rich. Finding these old wines can be tough though; unless you lay them down yourself, old wines are rare and expensive. Watch the full video for all the details about old wine!

Aging Wine at the Bottom of the Sea
In the southern part of Croatia, in the peninsula of Pelješac, one winery is taking their love of wine *deep*—75 feet below the Mediterranean Sea's surface. Wanting to combine his two favorite pastimes, winemaker and scuba diver Edi Bajurin built an underwater winery, with custom cages and secure clay amphora that store the bottles for a year and a half. But why underwater? For Edi, the ocean’s “silence” bestows and blesses wine with a certain richness unlike anything found above ground.

In the southern part of Croatia, in the peninsula of Pelješac, one winery is taking their love of wine *deep*—75 feet below the Mediterranean Sea's surface. Wanting to combine his two favorite pastimes, winemaker and scuba diver Edi Bajurin built an underwater winery, with custom cages and secure clay amphora that store the bottles for a year and a half. But why underwater? For Edi, the ocean’s “silence” bestows and blesses wine with a certain richness unlike anything found above ground.
