2020年2月下旬再訪。
旬のアンコウを食べるため、水戸へやって来ました。
梅が咲くこの時期はお店の予約が取りづらいので、早めの予約をお勧めします。
今日は「鮟鱇の鉄人が造る21世紀の鮟鱇料理」4,400円(税別)を注文。追加であん肝ポン酢を別注しました。
コースメニューは下記の通り。

■鮟鱇鍋(どぶ汁仕立て)

まずは瓶ビール、相方は自家製梅酒のソーダ割で乾杯。
次にとも酢やあん肝ポン酢に合う、霧筑波(辛口本醸)熱燗を頼みました。残念ながらふぐひれ酒は売切れです。
いつものコースとの違いですが、何故か先附に付く梅の小枝がありません。あと今日はしんじょ揚げと唐揚げのコラボになっていました。
とも酢は酢味噌で頂きましたが、鮟鱇の色々な部分を味わえます。別注のあん肝ポン酢もクリーミーで熱燗がオススメ!
鮟鱇鍋の具材は一度生の状態を見せてから、調理場で調理してくれます。どぶ汁仕立ての鮟鱇鍋はやっぱり絶品ですね。何度食べても食べ飽きません。ゼラチン質のプルプル感もたまりません。〆の雑炊は調理場で作って持ってきてくれますが、自身で作る方が好きな場合にはその場で希望を伝えましょう。
デザートの岩塩アイスも美味しかった。
