I got the bird all sliced &amp; packaged in &quot;to-go&quot; containers for my guests to take home with them. I then strained &amp; made the stock &amp; chilled it. Took off most of the fat...not all, &amp; then proceeded with your instructions to finish it just as the BIG turkey was coming out of the oven. Ta-Da!
