Making My Hot Cocoa {Complex, Yet Approachable}

#Hotcoco and #hotchocolate are staples during cold weather...especially at #Christmas and #NewYear. It is sweet, warming, decadent. We all want and crave it as temps plummet. However, sometimes it can be a bit thin, a bit to sweet, a bit one noted. This is especially true for the commercially made powders. Having made dozens of variants of this drink, Ken shows how to make his hot cocoa. Fudgy thick, rich, and complex this beverage is also remarkably approachable!

Ken's Hot Cocoa
1/4 c. Sugar
1 tbsp. Dark Brown Sugar, Firmly Pressed
1/4 tsp. Ground Allspice
1/4 tsp. Sea Salt
1 1/2 c. Whole Milk or Half and Half
2/3 c. Heavy Whipping Cream
1/4 c. Cocoa Powder
5 Marshmallows
1/4 c. Milk Chocolate Morsels
1/8 tsp. Chili Powder
1 tsp. Vanilla Extract

In a boiler add in the sugars, allspice, salt, dairy, and cocoa powder. Turn on the stovetop to a medium heat and use either a whisk or immersion blender to make sure all of the cocoa powder is incorporated and there are no lumps. Add in the marshmallows, chocolate morsels, and chili powder when the liquid starts putting off steam but isn't boiling. Bring to a simmer, stirring well until all of the chocolate and the marshmallows are dissolved. Once the marshmallows are dissolved, add the vanilla, stir well, turn off the heat, and pour into a festive mug. Top with your choice of toppings, such as: mini marshmallows, whipped cream, colored sugar, or shaved chocolate.
