Appwrite-1.8.0 Podman Compose File

The currrent docker compose file share for local hosting doesn't work with podman compose , We can use the updated compose file to work with podman in rootless mode.

I noticed that the standard Docker Compose configuration for local Appwrite hosting causes compatibility issues when attempting to run it with Podman Compose. This is often a blocker for those preferring a rootless setup for better security and resource separation.

To address this, I've created an updated Compose file specifically tailored for Podman Compose compatibility, with a focus on running successfully in rootless mode.

This updated file resolves key differences in how volumes and user permissions are handled between Docker and Podman environments.
