In item 7 of the list in this section of the Julia docs on writing documentation, it recommends

Use Unicode characters rather than their LaTeX escape sequence, i.e. α = 1 rather than \\alpha = 1.

This seems like a transformation that would be well suited to JuliaFormatter — though obviously subject to an appropriate configuration option.
