Cloves, लौंग 7-8 no. Black peppercorns, काली मिर्च के दाने 3-4 no. Black cardamom, बड़ी इलायची 2 no. Green cardamom, हरी इलायची 2 no. Bay leaf, तेज पत्ता 2 no. Green chillies (less spicy & roughly chopped) हरी मिर्च 3 medium Onions, grated, प्याज Salt to taste, नमक स्वादअनुसार 1 tbsp Tender Coriander stems with roots, finely chopped, धनिये के डंठल और जड़ें 1 ½ cups fresh Tomato puree, ताजा टमाटर की प्यूरी 2 tbsp Coriander powder, धनिया पाउडर 1 heaped tbsp Degi red chili powder, देगी लाल मिर्च पाउडर 1 heaped tsp Turmeric powder, हल्दी पाउडर ½ tsp Cumin powder, जीरा पाउडर 2 cups Kidney beans (soaked overnight) भीगे हुए राजमा 2 heaped tbsp Ghee, घी 3-4 cups Water, पानी 1 tsp dry Fenugreek leaves, crushed, कसूरी मेथी 4 no. Green chillies (less spicy & cut into diagonally) हरी मिर्च Coriander sprig, धनिया पत्ता Process For Cleaning Veggies ● In a bowl, add cauliflower, salt to taste, water and mix it well. ● Keep it aside to soak for a while. ● Strain the cauliflower and transfer it into the tray or bowl. ● Keep it aside for further use. For Paste ● In a bowl, add ginger, green chili, tender coriander stems and curd. ● Transfer it to a mixer grinder jar and grind it into a smooth paste. ● Keep it aside for further use. For Adraki Aloo Gobhi ● In a kadai, add mustard oil, once it's smoky hot, add cumin seeds and let it splutter. ● Add prepared paste, turmeric powder, coriander powder, degi red chili powder, a pinch of asafoetida and cook for a while. ● Add potatoes, water and cook for 2-3 minutes. ● Add cauliflower, salt to taste and give it a mix. ● Cover it with a lid and cook it for 12-15 minutes on medium flames. ● Finish it with lemon juice, ginger, green chillies, fresh coriander leaves, ghee and toss it gently. ● Transfer it to a serving dish, garnish it with ginger, green chillies and coriander sprig. ● Serve hot with roti. For Masala ● In a mixer grinder jar, add black peppercorns, black cardamom, dry fenugreek leaves and grind it into fine powder. ● Keep it aside for further use. For Ginger Garlic Paste ● In a mixer grinder jar, add green chillies, ginger, tender coriander stem, garlic and grind it into a smooth paste. ● Keep it aside for further use. For Onion Paste ● In a mixer grinder jar, add onions and grind it into a smooth paste. ● Keep it aside for further use. For Red Chili Paste ● In a mixer grinder jar, add soaked dry red chillies, garlic, ginger and grind it into a smooth paste. ● Keep it aside for further use. For Chinese Style Crispy Chicken ● In a wok, add oil, once it's hot, add ginger, garlic, tender coriander stems and saute it for a minute. ● Add fried chicken strips, white sesame seeds, black pepper powder, fresh coriander leaves, spring onion, salt to taste and give it a good toss. ● Transfer it to a serving dish, garnish it with spring onion and coriander sprig. ● Serve hot.
