First off, overnight oats are about the easiest breakfast you could ever make! You will love just waking up in the morning and already having your breakfast made for you.
Second, you will fall in love with the flavors of this easy breakfast. Goji berries bring a tart and aromatic flavor to it, and the oats turn out to creamy perfection!
Ingredients
Once you get the basic recipe for overnight oats down, then it’s time to get creative with the toppings.
Standard overnight oats consist of a 1:1 ratio of milk to rolled oats.
Some recipes call for using steel cut oats, which are less processed and more dense with nutrients.
For this recipe, we are not using steel cut oats, but rather we are going to use old-fashioned rolled oats.
Old-fashioned rolled oats turn out creamier and soak up the milk better than steel cut oats, which tend to turn out chewier.
Some people like to add yogurt to their overnight oats also, which would make it even creamier, but it also gives it a little bit of a tart flavor.
I personally like my overnight oats with just milk, not yogurt.
As for sweeteners, honey is a wonderful sweetener in almost anything, but for this recipe, since it sits in the fridge, I use real maple syrup as my sweetener.
Honey crystallizes when it gets cold, and we don’t want that happening here.

Bee pollen is an up-and-coming food ingredient that has a mild floral taste and aroma to it. I have access to bees and honey (my dad keeps bees), but bee pollen in recipes is relatively new to me.

You can find both goji berries and bee pollen in most major grocery retailers. If you can’t find it at your local grocery store, you can easily order both of those ingredients online.
Goji berries come dried and look and taste similar to dried cranberries.

How to make basic overnight oats with milk
I’m going to give you the basics of how to make overnight oats with milk.
Some recipes call for steel cut oats, but we aren’t going to do that since, in my opinion, they turn out a little too chewy for my liking.
I personally like creamy overnight oats, as opposed to chewy, dense overnight oats.
The best ratio of milk to oats for overnight oats is a 1:1 ratio. Take a pint size mason jar and add ½ cup of rolled oats to it and then add ½ cup of whole milk to it.
Add in a pinch of salt, ⅛ teaspoon of cinnamon and 1-2 tablespoons of maple syrup and stir it up. You can add more if you like it sweeter.
To the top, sprinkle on the goji berries, bee pollen and slivered almonds.
Put the lid on and place it in the fridge overnight or at least for 8 hours.
All you need to do the next morning is pull it out of the fridge and eat it with a spoon! Enjoy!
Variations
If you want to make your overnight oats creamier, add a few tablespoons of plain yogurt.
Other nuts and seeds like chia seeds, are also very popular in overnight oats.
If I like to indulge a little more, I add a small handful of stovetop candied pecans. YUM!

- 2 tablespoons slivered almonds
