The lowdown
Chef Daniel Humm and business partner Will Guidara made their names as the impresarios that turned Eleven Madison Park into an ultraluxe global dining destination. For their follow-up, they unveiled this slightly more democratic establishment in the NoMad Hotel. While the menu could be called “EMP Lite” (and in fact versions of dishes like carrot tartare and compressed blocks of savory, tender suckling pig originated on the older sibling’s menu), the overall vibe is more like the darker, more intimate companion to the original restaurant’s light, airy dining room. Given the team’s pedigree, it’s probably no surprise that the polish of the service matches the precision of the cooking, while a gorgeous wooden bar in back turns out some of the best cocktails in town, even if the after-work crowds can be punishing.
